Sustainable sourcing

Sourcing from as many local producers as possible who share our values ​​is the first step towards sustainable gastronomy. This not only reduces the carbon footprint of our business, but also supports the local economy.

Behind every object, there is a hand. The hands of the women and men who get up every morning to work the earth or the material, to cut, to sculpt: the plates, the knives, the bread rest, the flower pots… a whole network of ceramists, potters, cutlers, artists gravitates around the Terraces.

Treatment and recycling of our biowaste

Our establishment is equipped with a dehydrator to treat 99% of our organic waste, reducing its volume by 90% and transforming it into fertilizer, reused in our garden, by our market gardeners, by our employees and soon by our customers.

Rainwater and cooking water harvesting

To combat the drought, in addition to our two 3000L tanks collecting rainwater from the roofs, we store water from the heaters and coolers, as well as from the wine buckets, which allows us to water the entire vegetable garden and flowers every day without wasting resources.

Chemical-free ozonated disinfectant water system

Ozonated water replaces 85% of chemicals

The ozone generated by AVATAR softens tap water, breaks down impurities, and disinfects 99.9999% of bacteria on any material or surface. Avatar uses a magnetizer that acts as a pre-filter to alter the water's molecular structure by generating advanced oxidants. Furthermore, it doesn't store the water, meaning it purifies it and makes it immediately available, preventing any potential further contamination from storage.

In France, 51 million bars of soap are thrown away by hotels every year… when they could be recycled and redistributed to those in need. It is thanks to this wonderful social and environmental initiative that a simple daily action becomes a very real impact.

Tree6Clopes Association

We are members of the environmental protection association Tree6clopes, which aims to combat pollution caused by cigarette butts. Specifically, we collect all cigarette butts generated by our team and customers before sending them to the association, which handles their recycling.

An eco-conception website

Digital technology now accounts for approximately 4% of global greenhouse gas emissions, and every page viewed consumes energy.

To ensure our commitments don't stop at the establishment's door, we entrusted the redesign of our website to the agency Api & You, a mission-driven company and member of the Coq Vert community (Bpifrance / ADEME), which applies the principles of digital eco-design: optimizing page and image size, reducing server requests, using a minimalist graphic design, and hosting on an ISO 14001 certified infrastructure powered by low-carbon energy.

Reducing the footprint of our online presence means extending the same high standards we apply to our kitchens, our garden, and our daily choices into the digital world.
